Simple, easy dairy free, sugar free vegan coconut ice cream:
• 2 cups coconut meat,
• ½ cup Coconut water
• Pinch salt
Using a cocojack or a kitchen knife, open the top of your coconut and pour out the water into a cup. Set it aside.
Crack open the coconut with a clever and scoop out the inner meat.
Blend the meat, coconut water and salt in a blender.
Pour the mix into a container and freeze.
Serve it up in the empty coconut shell.
