We all love ice cream…right? Right! But we are all aware of the high sugar and dairy content that comes hidden in most of our favourite sweet treats. We’ve developed a recipe that is entirely sugar and dairy free but is still as deliciously creamy and tasty. It contains your favorite ingredients: Banana, Toasted Hazelnuts and the secret ingredient? Fresh raw coconut meat. This adds another dimension of creaminess and coconutty flavour! We cant wait for you to try it.

How to make Dairy Free Banana and Coconut Ice Cream:

Ingredients: 

  • 2 cups young coconut meat (scooped out of a young coconut) 
  • ¼ cup young coconut water
  • 2 tbsp coconut oil
  • 3 frozen bananas
  • 100g of toasted hazelnuts
  • 4 tbsp of raw cacao
  • 1 pinch of sea salt
  • 2 tbsp of almond butter (or other nut butter)
  • ¼ cup pitted dates

Instructions: 

Toast the hazelnuts on a baking tray in the oven at 180c for 10 mins. Let them cool.

Combine toasted hazelnuts, frozen banana, cacao, dates, sea salt and almond butter in a food processor.  

If it needs a little bit of liquid to get it churning then add little coconut water.

Slowly add the mixture to a tub, adding chopped hazelnuts and cacao nibs as you go. This will the crunchy bits to the final dish.

Freeze for at least 6 hours.

Always remove tub from freeze half an hour before you want to consume this delicious Raw Coconut Dessert. Serve it up and garnish with some hazelnuts and cacao nibs.
